Explanation of this incongruity lies in the fact that sustainability efforts are rarely positioned to include food choice in an accurate or adequate manner. In an altruistic sense, purchase of sustainable foods is strongly correlated with the measures of ethical self-identify, moral attitude, concern for environmental issues, and other measures of global concern. Additional analysis of values in relation to environmental purchasing and policy similarly found that intention to purchase environmentally friendly products is positively correlated with food and environmental concerns. While this ethical vision of making sustainable or organic food choices is often viewed as altruistic, it can also be viewed as an egoistic motivator, as it relates to personal identification as an ethical person.

Determinants of food choice for a healthy and sustainable diet

To obtain a better insight into the conceptualization of sustainable consumption among consumers with special focus on food choice determinants. Previous studies show that people present positive attitude towards sustainable diet while their everyday food choices do not follow sustainable diet rules. A structured questionnaire was designed and data were collected via computer-assisted telephone interview among a random group n of city-dwellers. Quota sampling was used in proportion to the city population. Cluster analysis k -means method was applied to identify consumer segments according to the determinants of food choices. The Friedman test was applied to identify enablers and barriers of sustainable food choices.

Chapter 3 presented the evidence on relationships between participation in the Supplemental Nutrition Assistance Program SNAP and the potential for participants to achieve the program goals of improving food security and access to a healthy diet. This chapter presents evidence on individual, household, and environmental factors that affect food purchasing and consumption decisions and their impact on food choices and access and ultimately on the adequacy of SNAP allotments for achieving those goals. It contains an umbrella review of 44 systematic reviews to synthesise all the available evidence for the effectiveness of low-agency population interventions at reducing meat selection, purchase, or consumption. A critical assessment of the evidence is used to discuss the wider insights gained and the implications for policy and practice. This work was funded by the Global Food Security GFS programme as part of its Policy Lab, in which postdoctoral researchers compete to write a policy-facing report for the programme.
